Consumer demand for menu selections without the presence of gluten was increasing across Aramark lines of business, with the highest and most pressing demand in Higher Eduction. While the overarching Allergen Solutions was in place, there was no enterprise-level program specific to gluten.
The goal for this Allergen Solutions' stepchild was to fit seamlessly into the servery environment in an attractive, but unobtrusive way while not detracting from—or competing with—the food appeal of limited-time-offer signage.
